Treasures in your Mailbox

Are you throwing these away as soon as they come in the mail….If so, SHAME ON YOU !!!! There are a lot of great coupons inside these 2 mailers. It depends where you live what coupons will be provided to you, and the time of year it is too. For instance in the middle of the Winter you are not going to get waterpark coupons. Where I live we get in the valpak a buy one get one free to one of the local restaurants that we like and 2 half off coupons to a local frozen yogurt venue. Hometown Values has a lot of gret coupons and I never throw this book away until it has expired. I keep this handy book in my car and when I am out and about I always look for coupons where I am at. I will go to certain stores based on the coupons too. So if you threw yours away this month rememvber to look through yours next month. I promise you will find a treasure inside one of these that you will for sure use throughout the month !!

Make it Yourself Saves you Money too !!!

Don't get me wrong…I LOVE to eat out and let someone else do the cooking and the cleaning up afterwards….but most of the time it is NOT cost effective to do so. One of my husbands favorite places to eat is Zupa's. They have one of his favorite soups…Wisconsin Cauliflower Soup. Now for us to go out and eat it costs our family over $20 to eat (just soup). I found this copycat recipe on Pinterest and bought the ingredients for $10. Now that will make dinner for 4 plus enough for him and I for lunch the next day! So now when he is craving one of his favorite soups I can give that to him and SAVE too !!!! Sometimes saving money means cleaning up the mess after cooking instead of letting someone else do the job :O) But is is worth it !!!!! I found this on Pinterest from Chef In Training. It tastes just like the Zupas Soup too !!!! YUMMMMMM

COPY-CAT ZUPAS WISCONSIN CAULIFLOWER SOUP

This recipe is AMAZING! So close to the real deal!

INGREDIENTS

• 3 Tbsp. butter
• 1 medium onion chopped
• 1/4 cup flour
• 1/2 tsp. salt
• 1 cup half and half
• 1 cup milk
• 1 1/2 cups water
• 1 (14.5 oz) can chicken broth
• 2.5 lbs cauliflower
• 1 tsp. Dijon Mustard
• 1 1/2 cups sharp cheddar cheese shredded
• 1/2 cup pepper jack cheese shredded

INSTRUCTIONS

1. Melt butter and chopped onion together in a large sauce pan and sauté for approximately 10 minutes over medium heat until onion gets golden in color.
2. Add flour and stir to make a roux. Heat while stirring for a couple of minutes.
3. Slowly add half and half along with the milk. Gradually add and stir the entire time. Following the milk, gradually add water and chicken broth and stir constantly.
4. Add chopped cauliflower and heat until boil.
5. Reduce heat and simmer, covered, until cauliflower is tender. This will take approximately 15 minutes.
6. Place contents of sauce pan into blender and blend until smooth. Remove center part of blender cover to allow steam to escape.
7. Return cauliflower mixture to saucepan; heat over medium heat until hot, stirring occasionally. Remove saucepan from heat; stir in mustard and cheese until melted and smooth.
8. Serve soup topped with a little cheese for garnish.
